Everyone loves a local restaurant with delicious food and feel-good service. You could make the most salivating burger in Ocean County, but a kitchen fire will certainly change that flavor.
The high-heat environment of a commercial kitchen requires good air flow and no build up from grease to be safe from fire. Grease laden air generated by grills, fryers and other cooking stations is continually generated and deposited on all surrounding surfaces in this environment. Most kitchens use an exhaust system specifically designed to keep fresh air flowing in and grease laden air flowing out. So, if the system is working and circulating air, what’s the fire hazard?
